Ever want a quick snack that’s not only tasty but also healthy? I discovered cookie dough a while ago and it’s so quick and easy to make. It’s my go-to treat when I’m craving something sweet but don’t want to spend too long in the kitchen.
I had this thought! Is there a way to make it more nutritious? Maybe pack some extra protein? I’ve tried black bean brownies before and they were great so why not try to incorporate some beans to cookie dough? This is how these dough bites were born and they’re so soft and tasty that you would never guess they’re made out of beans.

Ingredients
- 250 g Haricot Beans cooked and drained
- 1/2 cup Oat Flour
- 1/4 cup Coconut Flour
- 4 tbsp Agave Nectar
- 1 tbsp Almond Butter
- 2 tsp Matcha Tea
- 1 tsp Vanilla Extract
- Coconut Flakes for coating (Optional)

Instructions
- Blend all the ingredients in a food processor until smooth
- Form into spherical bites and if desired cover with toppings. I used coconut flakes.

Jo's Tips
- You can use any type of light coloured legume for this recipe. I've had success with canellini beans and chickpeas.
- If you don't have freshly cooked beans you can swap for canned.
- You can easily make your own oat flour by blending oats in your spice blender or food processor. It saves some money too!
- Any kind of nut butter will do in this recipe, just pick your favourite!
- For topping your bites you can use any of your favourite nuts, white vegan chocolate flakes, coconut, sprinkles or anything else you have at hand!
