  1. Blend all the ingredients in a food processor until smooth
  2. Form into spherical bites and if desired cover with toppings. I used coconut flakes.

Jo’s Tips

  • You can use any type of light coloured legume for this recipe. I’ve had success with canellini beans and chickpeas.
  • If you don’t have freshly cooked beans you can swap for canned.
  • You can easily make your own oat flour by blending oats in your spice blender or food processor. It saves some money too!
  • Any kind of nut butter will do in this recipe, just pick your favourite!
  • For topping your bites you can use any of your favourite nuts, white vegan chocolate flakes, coconut, sprinkles or anything else you have at hand!
